something sweet

not alot to report here, well, not that I can say anyhow…
so in the meantime I decided to make cookies.
I found a jar of Peanut Butter & Co.’s The Heat Is On spicy peanut butter and though- awwyeah.

I love gingersnaps that have real bite so why not a bit of zing in a pb cookie?

2 sticks of unsalted butter
2 eggs
1 cup brown sugar
1 cup white sugar
1 cup Spicy PB
1/2 cup chunky PB
1tsp baking soda 1tsp vanilla extract
2 1/2 cups flour (a blend of white & wheat)

blend pb, sugars and butter
add eggs & beat
add baking soda, extract and flour
flatten with a fork (why? cuz that’s what Peanut Butter Cookies look like… but can someone tell me why exactly?)

bake for 12 minutes at 350•

I sprinkled mine with Himalayan Pink Salt and it really rounds out the flavors!

    Wow! SUper yum! I never thought of using spicy peanut butter to make cookies… oooo- the word is out!

    Maybe you flatten them so they crisp up and they’re not like “peanut butter”, but I’ve never made them and don’t really like them (altho that salt addition sounds like I would like them), so I wouldn’t really know. Wanna bring me a batch?

      Hello Samantha! I’m not sure what you meant about the cookies “not being like ‘peanut butter’ “.
      I made the traditional fork-smash pattern so they’d be recognizable but didn’t make them into
      rounds so they would have a rustic quality about them.
