Thai Mango Salad

Initially created for the UCONN SNAP Challenge this past winter I felt like tonight was a good night to whip this out and satisfy my craving for some cooling heat. The ingredients in italics represent the original SNAP budget items that would be replaced by product without economic restraint.

Green Mango Salad
1 green mango, peeled and shredded
2 carrots, peeled and shredded
1/4 cup thawed frozen green beans or chopped longbeans
1/2 red onion, thinly sliced
3 cilantro stems cut in thirds
2 limes, juiced and zested
1/4 cup crushed peanuts
1 Anchovy fillet and 1 T brown sugar or 1T nam plaa (Thai-fish sauce)
(mash anchovy and sugar with a fork into a paste adding 1/2 the lime juice)

toss mango, carrots, onion, stems, green beans in lime-anchovy dressing
garnish with peanuts and lime zest
